Chia Oat Crackers2 C. Rolled Oats (NOT Quick Oats)
1/2 C. Chia Seeds 1 C. Grated Parmesan 4 Tb. Olive Oil (I used sesame because I love sesame) 2/3 C. Hot Water 1 Drop Thyme Oil Instructions Preheat oven to 150 degrees (or lowest setting). Line a cookie sheet with parchment paper. Put the oats in a food processor and process until smooth. Put into large bowl and add chia seeds and grated parmeson. Make a well in the center. In a separate bowl combine oil, water, and thyme oil. Pour into the well in dry ingredients. Mix into a sticky dough. Set aside for 10 minutes. Turn dough onto a clean work surface and roll thin (or roll directly on cookie sheet). You can use a cookie cutter to cut cracker shapes, put onto cookie sheet. Bake for 45 minutes or until crisp and dry. Transfer to a wire rack to cool. If you roll cookies out on the cookie sheet it will take more time to bake and dry. |
